In today’s recipe, I’ll show you how to make minestrone soup. It’s a soup with plenty of vegetables in it. What I enjoy about this soup is that it provides both warmth and nutrients. You can benefit from whatever vegetables you add. To be honest, I’m feeling very cozy when eating this dish, which is a new dish to me. But, in any case, I did it my way!

THE INGREDIENTS FOR MINESTRONE SOUP ARE

  1. Packet of pasta, whatever you’ve got in your pantry.
  2. Half cup of white beans. For the beans, I soaked them from morning till afternoon, then I cooked them in the instant pot.
  3. Celery, half cup.
  4. Mix vegetables (carrots, green beans, and corn).
  5. Green coriander.
  6. Chopped potatoes into small pieces.
  7. One onion medium.
  8. Three cloves of garlic.
  9. Condiment (Italian, nutmeg, cinnamon, pepper, salt, cumin, and coriander) or as you prefer.
  10. Cup of broth (I used meat broth); I don’t want the cubes, if you know what I mean!
  11. Olive oil.
  12. Tomato sauce.
  13. Boiled water.

STEP-BY-STEP INSTRUCTIONS:

  1. Combine the oil, onion, and garlic.
  2. Add all the vegetables and your condiment and stir.

3. Tomato sauce.

4. Then, add the broth and the boiling water.

5. Cook the vegetables together for 25 minutes, covered.

6. Finally, add the pasta and cook it until it is done. Then add chopped coriander. Then serve it and enjoy your minestrone soup.

HOW CAN YOU REHEAT LEFTOVER MINESTRONE SOUP?

You can easily enjoy leftover minestrone soup the next day. Simply add a little water to the soup to restore its consistency, then reheat it in the microwave until it’s warm and ready to serve. Just like that, your soup will feel fresh and delicious once again!
